3 Runs and 3 Meals

We moved into our new China apartment one week ago and have been busy trying to get settled.


I didn't start to FEEL completely settled until I slipped on my Wave Rider 18s and went for my first run. I got lucky with lower than normal humidity, but any thoughts I had of big breezes coming off the water were quickly erased.


I tried again a couple of days later and even though it was more humid, my run was better.


This morning I ran in a new place hoping to connect with a path to a park, but instead I found everything blocked by new building construction. It's going to take awhile to get comfortable with my new geography.


Speaking of getting comfortable, we finally stocked the apartment with what we need to cook some real meals. Thanks to one of our new ex-pat friends (and stores that import some US foods), I have a crockpot and fixed some Italian chicken for our first dinner.


This morning mrC treated me to his famous cheesy scrambled eggs and PB&J rice cakes. I really missed those eggs.


I've also been missing my cheesy quinoa and tuna (recipe here), so today I decided to make some. We found what we think is quinoa along with the rest of the needed ingredients: tuna, plain Greek yogurt, and parmesan cheese.


Making my way around the kitchen has had obstacles, too. I don't have a measuring cup yet, so I did some guessing. I also bought Greek yogurt that doesn't have a resealable lid.


When I was shopping, I also didn't notice that one can of tuna was in oil. Ick. But it worked.


It feels good to have a favorite meal from home.

On-the-Go Egg Muffins

I'm all about making things simple.

The time in the morning before I go to work goes by the fastest. I like to try to enjoy a full cup of coffee while watching the morning news before I leave. No matter how early I get up, it never seems like I have enough time to do everything I want or need without feeling rushed.

I've made packing lunches easier by preparing on the weekends. You can see some of my favorite recipes here and here. mrC helps with breakfast by making smoothies when he is home, but lately I've been wanting something warmer. Hmmm, wonder why?


On-the-Go Egg Muffins

6 eggs beaten
shredded cheese
shredded ham
shredded spinach

Preheat oven 350 degrees
Grease muffin pan

Fill with ham, spinach & cheese
Pour egg mixture

Salt & Pepper to taste

Place center rack 20-25 minutes (to light brown)
Let cool before removing from muffin pan


So good. So easy to grab a couple and heat them up for a quick breakfast before I leave. I can even toss a couple in a baggie and heat them up at school if I want. In fact, they make a pretty good lunch option that way too.


Sometimes I don't always eat right after a run/workout because I don't feel like making something. On-the-go egg muffins also make an excellent post-run or workout snack because they're packed with protein which is good for muscle recovery. In my recipe spinach is good too because it helps muscle growth.

WIAW: Chocolate Protein Puffed Rice Bites

My favorite post-workout snack is a little ball of chocolate. Literally. Normally I'm not a chocolate kind of person, but sometimes a little bite of peanut butter, chocolate, and crispy just hits the spot.



I'm a big fan of Lindsay Cotter and her delicious Healthy Bites. In fact it was her Muddy Buddy Mochas that started my interest in little bite sized post workout treats.

I've learned over the years that it is important to consume some protein within 30 minutes of a hard workout because it aids muscle recovery and also prevents over-eating later (my biggest problem). The (other) problem for me is that I usually don't feel like eating anything right away.

After ordering some Healthy Bites and then purchasing her recipe eBook, I was inspired to create my own bites. I thought about some of the chocolate candy bars that I've liked over the years and sometimes crave as a little snack: Reese's Peanut Butter Cups and 100 Grand Bars were at the top of my list. 


After jotting down the recipe, I got right to work. Not only was I excited to see how my own creation would turn out, but ever since going GF, I have so much more energy! Most Sundays you can find me wearing my "Chef's hat" and going a little crazy with projects in the kitchen. Ok, back to the treats...I tossed all the ingredients into a bowl and started mixing it up.


After mixing all the ingredients together, I rolled the mixture into 1.5 inch balls (approximately) and placed them on wax paper before putting into the freezer.


About an hour later, my new bites were ready to try. The puffed rice wasn't as crispy as a candy bar, but they are absolutely yummy!

WIAW: What's Cookin'?

After frying my legs in my last half marathon, I have been giving them a chance to refresh. With no races looming on my calendar, I am totally not enjoying the pressure-free break from running, and mixing up my strength training with some daily challenges.

Trying to stay positive, I am spending more time in the kitchen cookin' up some new recipes, along with some favorites. All follow our new wheat-free diet and some are packed with protein to make great post-workout snacks.

WIAW: Indian Summer Treats for Runners

We love summer squash, not only because it tastes so good, but also for all its benefits: antioxidants help reduce inflammation, low in calories, and packed with vitamins.

I don't know about where you live, but here in New England we've been having some unseasonably warm weather. It's good for running and it means that the farmer's market is going full swing, so we can still find some locally grown summer squash.

mr.C loves to grill up the yellow squash and zucchini with some EVOO, rosemary, and garlic (to keep the mosquitos away!), but this weekend we decided to try a new recipe that gives these veggies some room on our fall menu.


This recipe is so simple, but you might need to plan ahead for the baking time. "Tian" is a French word used to describe a casserole dish in which veggies have been layered with spices and cheese, and are then baked.


It was good. Really good. And the leftovers are really good too!


One of my favorite Halloween treats has always been candy corn. This year I'm trying to stay away from the extra holiday calories, so I'm going to make some healthier treats. One of my newest recipe finds is great any time, but especially after a good workout since it's made with protein powder.

WIAW - Wheat Free ZOOMA Road Trip

Last weekend was my first BIG wheat-free road test as I headed to Cape Cod for some ZOOMA fun. Unsure of how I would do finding G-free restaurant/menu options, I packed some snacks in a cooler for the trip: rice cakes, PB&J, cheese, GF crackers, grapes, and yogurt. So for WIAW, I'm giving you a peek at my eats from the weekend!


When we arrived in Falmouth, I whipped out my trusty iPhone and opened the handy dandy YELP app. Using the search feature, I found three restaurants listed under GF menu options. After reading the reviews and checking the websites, we choose Stone L'Oven because it boasted delicious GF pizza. This very late lunch also became dinner.


After fulfilling my ambassador duties and serving up Personal Best medals at the post-race expo, we headed to Woods Hole for lunch and a little sight-seeing. After using the YELP app again to locate G-free restaurant options, we settled on Fishmonger Cafe after reading the menu posted on the door. mr.C and I shared a delicious serving of GF Rice & Beans: black bean chili, brown rice, cheddar cheese, shredded lettuce, and fresh corn tortilla chips served with salsa and sour cream. Blogger blunder, I forgot to get a picture, but here's one of our post-lunch wild berry fruit smoothie made fresh at Woods Hole Market.


On Friday night when we skipped dinner but joined fellow ZOOMA ambassadors briefly after the Mocktail Party, I noticed that Red's (the resort restaurant) offered GF items on their menu. So for dinner on Saturday we ordered some take out on our way back to the room after watching the sunset on the beach. We both chose the GF veggie burger meal with fries. The GF bun was so huge I had to cut it in half. Despite my terrible photo, the veggie burger tasted homemade and included a spicy kick.


With so much success finding GF restaurants using the YELP app, we did it again on Sunday. This time we hit the jackpot with Idgy's - a 100% Gluten Free restaurant! It was so nice to be able to order ANYTHING off the menu. I selected the chicken panini quesadilla and mr.C chose blueberry pancakes and eggs.


We were so happy with our meals that we picked up some GF chocolate chip cookies to go. All I can say is, we should have bought more!

There were actually more cookies in the baggie, but I ate some before taking the pic!

For breakfast both Saturday and Sunday, I raided the mini kitchen and had PB&J rice cakes, some yogurt, and coffee. I've never been a BIG fan of the large restaurant-style breakfast, so this worked perfect for me.

Most of the food we ordered was made in restaurants that also made meals containing gluten. While we are not allergic, we knew the possibility of cross-contamination existed and all of our servers made a point to also tell us. We were comfortable with the small chance, although I recognize that some people may not be.

I'm feeling really good about my first time eating on the road and staying true to wheat-free diet. It was easier than I though it would be thanks to YELP and restaurants offering GF menu options.

WIAW: Greek Flaxseed Protein Pancakes

One thing I am learning on my wheat-free journey is that you don't have to give up your favorite foods altogether. With wheat-free options and substituting ingredients, I can still prepare many of our family's favorites. Pancakes are one of those favorites.


After an exhaustive internet search, I found a wheat-free/GF recipe that looked good and sounded good - by that I mean it didn't sound complicated. So I gave it a whirl. The first thing I noticed after mixing all the ingredients together was that the batter was much thicker than regular pancake mix. Looking at it, I was worried that I had done something wrong.


Dropping spoonfuls into the pan didn't make me feel any better because the batter did not spread out like I was expecting (based on regular pancake recipes) and again, I worried that I had made a mistake in my preparations.


However, just like when I have made regular pancakes in the past, a little patience mixed with a few flipping attempts and I finally realized that the batter was fine and the pancakes turned out delicious.


This recipe is for one serving or four medium pancakes, but can easily be doubled.

WIAW: Quinoa Pizza Bites

Today, instead of talking about running adventures, I'm sharing my recent food adventure!

At the beginning of the month, mr. C and I went WHEAT FREE! I downloaded a copy of the book Wheat Belly: Lose the Wheat, Lose the Weight, and Find Your Path Back to Health and cleaned out the cabinets. We are doing this as an experiment. Neither one of us have a medical issue or health concern. We just want to see if we will really feel better by eliminating all wheat/gluten from our diets.

While tossing all of the food that had wheat in it, I was shocked to see how many bread products we were using at each meal. I was tossing out English muffins, bread, tortillas, buns, and pasta. Then I moved on to reading labels and tossing sauces, soups, cereal, and chips.

Soon, I was thinking, What are we going to eat? My meals have been so programmed to include some sort of wheat product, that I worried we would be starving!

I was wrong.

Over the past four weeks, I have been learning a lot about food and trying some new recipes. In my last WIAW post, I shared some of the smoothie recipes I've been making. Recently, I tried quinoa for the first time.


Lack of planning on my part forced me to modify the recipe I found online because I didn't have the exact ingredients, but I don't think it interfered with the end result at all.


When I make this again, I will definitely use mozzarella cheese and fresh basil as the original recipe lists and a little more pepperoni.

Review: Bestowed

About a month ago, I was contacted by Bestowed to see if I would like to review one of their monthly subscription boxes.


Normally I would pass on this kind of thing, but since I have found some great products simply by testing them at an expo or race, I decided to give it a try. Plus there is something in it for you!!

Bestowed is a monthly care package filled with five healthy product samples that are hand picked by a nutritionist and shipped to you each month to try out. The membership is $19 a month or $209 annually. I received a complimentary June box.


When my box arrived, I was happy to find that not only did it contain a variety of products to try, but also a What's Inside insert. This information sheet describes each product and gives suggestions for how to use them.

Here's what I liked in my box:

If you had asked me as a kid to put anything other than cheese on my salad lettuce, I would've shrieked at you in horror. I was a picky eater, still am in a lot of ways. But I have evolved and now put more on my salads than my teenage self ever dreamed I would. I used the GimMe Cheddar Cheese Seaweed Crumbles as a replacement for croutons and it was very tasty.


I love smoothies, especially the ones made by someone else, but sometimes I use the pre-made kind you can get at the grocery to make them at home. I added some healthiness to my "homemade" smoothies by mixing in a package of Roots Superfood Powder. I made one with Zizo coconut water and one without because I'm not a fan of the flavor coconut. I didn't like the one with the coconut water, but the Roots pack actually added some flavor.


As a lover of snacks and chips, I enjoyed trying the Acai Berry Nut Butter. I tried it on Ritz and saltines, and it was good on both. I could easily see throwing the packets in my lunch bag and snacking at work.


The rest of my box included a coconut cashew TrueBar (which I didn't try because of the coconut), some antibacterial hand wipes from Herban Essentials that I already stashed in a desk drawer at work, and a free download of the Bon'App app that would be great for someone counting calories. I really wanted to use the coupon for a free package of Dr. Praeger's California veggie burgers, but they aren't sold in any of my local groceries.


A monthly subscription to Bestowed is great for people who are really focused on healthy products, but honestly that's not me. It's nice that you can try a sample of something and then go buy more because you already know that you like it. You have to acknowledge that there are going to be some items that you won't like or don't want to use, and some of the products might be available online only.
